Vegan Recipe: ‘atashooka’

Here is a recipe I made based on a dish I ate at Barbukka and recipes I found online for ‘Shakshooka’. The dish I ate there and the recipes found are kinda different so the result is something different again but still yum! :)

Ingredients:

  • 3 large potatoes. washed with skin on!

  • bottle of tomato pasta sauce or 4 large ripe tomatoes (around 400grams)

  • small onion

  • teaspoon of paprika

  • salt

  • fresh ground pepper

  • 2 cloves of garlic

  • olive oil

  • half a medium capsicum (bell peppers some places call them)

  • Mushrooms

  • Turkish bread

  • (eggplant would go well too if you like but I’ve not tried it so not sure how to best prepare it for this)

    Directions:
    Baked potatoes:

  • chop potatoes into cubes of about 2×3cm

  • add some olive oil to a deep frying pan on a medium heat

  • throw in potatoes – sprinkle with a pinch of salt and plenty of ground pepper to taste. cover’ with lid.

  • (should take about 20 mins or untill cooked but not too mushy)

    Sauce:

  • add some oil to a saucepan – bring to low/medium heat

  • chop onion and garlic finely and add to saucepan and lightly fry for about 2 mins

  • add paprika and grind in some pepper – stir

  • add chopped tomatoes or tomato pasta sauce and pinch of salt – stir – simmer for 3 mins

  • chop capsicum into 3×3cm squares and add to saucepan – stir – simmer for 10 mins

  • chop mushrooms in quarters and add to saucepan for the last couple of mins stirring a few times.
  • Serving:
    place potatoes into serving bowl and add sensible amounts of sauce on top :)
    serve with warmed or very lightly toasted turkish bread.

    Eating:
    With mouth! :P

    A red wine or flavoursome Ale would go well with this.
